Advanced Fish

Matthew Dorich will also be teaching this course, with his mix of unusual recipes, patience and enthusiasm. It is the next step from the Essential Fish and covers more of the tricky sauces and complex dishes.

 

We will spend time going over some of the less common varieties that can be substituted for over-used cod, salmon and tuna. You will also work with shellfish and molluscs, learning how to prepare them and cook them sympathetically, and you will make the classic French dish Bouillabaise.

 

When using expensive raw ingredients, it seems criminal to cook them inappropriately. Matthew will teach you some interesting and delicious recipes to take home.

 

We believe that no feast is complete without a glass of wine, however if you require more than this, wine is available to buy on the day.
