Essential Fish

Fish is quick, easy and extremely healthy, and yet, lots of people seem to be nervous of tackling it. Matthew Dorich worked under Rick Stein in Cornwall and has developed a huge knowledge of seafood and fish and is an exceptional teacher as well.

 

You will learn today how to recognise if a fish is fresh by look and smell. If you are a keen fisherman (or know someone who is!), we will show you how to gut, fillet, de-scale and skin your catch. This is a lot less messy than you might think.

 

The course is an introduction to using fish in simple dishes. As well as learning to skin, fillet and pin-bone he will show you how to spot if a fish is fresh or not. We will teach you a number of recipes that cover all the basic techniques, that are impressive enough for any dinner party.

 

We believe that no feast is complete without a glass of wine, however if you require more than this, wine is available to buy on the day.
