Essential Game

This course is designed as an introduction to the art of game cookery. It will open your eyes to country life as well as show you how easy it is to prepare wild food. This course champions the most natural and traditional production method - nature's way!

You will prepare a Venison carcass, as well as Rabbits and Pheasants, learning to skin and butcher them all. We can show you quick and easy ways of preparing a pheasant without any of the mess and hassle associated with plucking as well as a fast and effective way of getting the skin off a wild rabbit. We will then cook a number of Mike's favourite game recipes and will teach you many of the vital techniques. There will be lots of tips, ideas and advice for you to take away with you and you should walk away with confidence to go home and experiment more with game. As with all of our courses, the cookery day is followed by a feast in the dining room!

We believe that no feast is complete without a glass of wine, however if you require more than this, wine is available to buy on the day.
