Venison Butchery

This is the course for those who stalk or who share Mike’s love of preparing and cooking this country’s greatest wild meat.  The session will start by sknning a wild deer carcass, then butchering it in the most detailed way, showing you all the little secrets that Mike has developed over the years. To end, a couple of key cooking techniques to note, as well as a superb tasting feast.

Fish Preparation and Basic Cookery

This demonstration will take away any apprehension you might have about preparing fish.  Become fearless of round and flat fish, perfect your fish stock, fillet with confidence and discover how to make the most out of every last flake! A delicious tasting session will end the morning or afternoon.

Artisan Baking

Throughout this bread making demonstration, Kostas or Oliver will show you expert techniques for mixing, kneading and shaping the dough to create beautiful loaves.  Discover tips and tricks to achieve the perfect crust and crumb, taste and texture. The session will end with a delicious tasting with hams and cheeses.

Asian Flavours

This demonstration is taken by worldly Kostas who will concentrate on four exotic dishes – Thai Fish Cakes, Pho Bo (Vietnamese Beef Noodle Soup), Thai Red Curry with Duck and Orange and Cardamon Creme Brulee.
